Jelly Cookies, or jelly cookies, are a colorful and unusual way to prepare cookies, as well as having a very different texture.
They are, in general, very tasty and perfect for the little ones, although they can give that differentiating touch to some of your banquets and will be an excellent company for a tea or chocolate.

Jelly cookies recipe
Ingredients
- 500 g of flour
- 350 g butter
- 250g sugar
- 1 tablespoon yeast
- 1 large egg
- Vanilla extract (optional)
- 8 tablespoons of gelatin
Preparation
- Beat the butter with the help of a mixer until you have a very creamy texture. Incorporate the sugar.
- Then add the egg and, if you wish, the vanilla extract. Keep mixing until you get a fluffy result.
- At this time you can preheat the oven to 180 ° C centigrade. Do not forget this step, otherwise, you will add extra time to the preparation.
- In a separate container proceed to incorporate the powdered ingredients, but you must do it as follows:
- Sift the flour and yeast through a strainer to break up the lumps and stir them in.
- Reserve the gelatin for the next step.
- Proceed to incorporate the flour and yeast to the mixture that you have prepared before, keep in mind that this must be done little by little, to avoid lumps from forming, and beat generously until you get a homogeneous dough.
- Next, divide the dough into 4 portions and sprinkle each one with 2 tablespoons of the gelatin that you have selected for your preparation.
- Knead each part until all the ingredients are perfectly incorporated. Do not worry if you see gelatin crystals, this will be part of the texture of the cookie, what you should achieve is that it is dispersed all over the places in the dough.
- You can use food coloring in case you want to obtain more intense colors in your cookies, however this will depend on the taste of each one.
- Once you have finished kneading, form the portions into balls and flatten them with something (for example, a bowl).
- You will see how it fractures at the edges, this is what gives them the flower shape that these cookies have, although if you prefer you can use a cookie cutter to give them the shape you choose.
- Put the cookies on a baking sheet and leave them in the oven for about 10 minutes. Of course, keep an eye on them. You don’t want them to be raw or burned.
- Once they are ready, remove them from the oven, let them cool and enjoy these extravagant but delicious cookies.
